WHAT DO “MICELLAR” AND “NATIVE” MEAN IN RELATION TO CASEIN?
Although the terms themselves mean different things, they both signify that the casein is in its natural, unaltered state. Micellar refers to the micelles that casein naturally forms in milk. Micelles are aggregates of different types of molecules evenly dispersed in a liquid. In milk, casein forms aggregates with itself and various minerals, such as calcium and phosphorous. DO NON-NATIVE CASEINS EXIST?
Non-native (denatured) caseins do exist and are used abundantly in foods as nutritional and functional ingredients. The vast majority of denatured caseins are called caseinates. Caseinates refer to the salts that are formed between casein and minerals when casein is reacted with an extremely strong alkaline chemical, such as sodium hydroxide. Caseinates are vastly inferior to native caseins because they lose valuable nutritional and functional characteristics in the denaturing process that make micellar casein so desirable.
